Hubby's Crock-pot Chicken

3/11/2014

So I take literally NO credit for this recipe.  This is 100% a creation of my husband whom NEVER cooks!  But hey, if you have to start somewhere a Crock-pot is probably a good place to start right?  He actually invented this a couple months ago when I had a sick day and it actually turned out really good!  Win for the hubby!  The ingredients are simple and there's nothing to turning the Crock-pot on LOW for 6-8 hours and letting it do all the work.

I decided to try to recreate this in his honor and it turned out rather good.  Although, it wasn't until he got home that I realized I'd left one ingredient out but I'll share it with you below.  So, let's get cooking!

Step 1:  I buy/use these individual servings of chicken breast but you can use whatever chicken you have.  I'm sure it would be just as good with thighs or any other kinds of chicken.  Place it in the bottom of the Crock-pot after you give it a decent rinse with some water.  For this I used 3 chicken breasts.

Step 2:  This is where I messed up his recipe a little.  My husband used Italian Dressing to cover the chicken in liquid where as I used chicken broth.  Either works.  It's just your preference and of course calories!  Just make sure that the chicken is covered to keep it nice and moist.

Step 3:  He used these Sauteed Express cubes.  He told me he used two so I used two for this recipe as well.  It says on the box that one cube can do 2-3 chicken breasts but I went with the masters orders!

Step 4:  This might seem like a weird one but he added in a whole packet of Dry Ranch Dressing Seasoning.  Hey, it added some great flavor!

Step 5:  Turn your slow cooker or Crock-pot on LOW and let it go for 6-8 hours.

Step 6:  I took one of these Steamers with Brown Rice in it.  I love these things!  They are super easy and cook up in just minutes in the microwave and there are no dishes to clean afterwards.

Step 7:  Plate It Up! I just laid down some of the rice and then placed the chicken on top of it.  You can add a side of veggies or a salad like I did and you've got a really healthy meal!

I hope you all enjoyed this recipe and will give it a try...I know my husband will enjoy ANY feedback you have on it since this was a success and he's cooking more now!
