Cooking with HelloFresh | Indian Stuffed Peppers
5/23/2015Next up on our cooking adventure with HelloFresh was these Indian Stuffed Peppers with Curried Beef and Garam Masala Scented Rice. This dish reminded me a lot of making tacos and how I make them all in one pan. I was slightly worried since I’m not a huge curry person but this dish turned out amazing.
My only real suggestion for it is that you add some of the curry and garam masala seasonings to the beef when you are browning it. The rice was very flavorful but the beef was lacking a little something and I think seasoning was it. I might not make this with the peppers again but as a more Indian version of tacos. One of my toddlers tried it and liked the rice mostly (but she’s a rice fanatic!).
Hubby gave this a 5 on his scale. I think that had more to do with his being in a steak and potatoes kind of mood when I cooked this dish though. I’d say it was a 6 for me. Definitely one I will try again but maybe tweak here and there to make it more suitable for our family’s eating habits but a great meal none the less. Directions:
1. Preheat oven to 350 degrees. Halve and core bell peppers. Drizzle each half with ½ tsp olive oil and season with salt and pepper. Place on a baking sheet and roast for 20 minutes.
2. While bell peppers cook, halve, peel and chop onion. Peel and finely chop carrot. Finely chop the parsley leaves only.
3. Heat 1 tbsp olive oil in large pan over medium heat. Add ground beef, season with salt and pepper and brown (about 7 minutes) then set aside. **NOTE: I RECOMMEND YOU SEASON WITH THE CURRY POWDER AND GARAM MASALA SLIGHTLY FOR SOME FLAVOR IN THE BEEF**
4. Add onion and carrot to same pan you cooked beef in and season with salt and pepper. Cook, tossing for about 5 minutes.
5. Add 1 tsp curry powder and garam masala to pan and cook for 30 seconds until fragrant. Stir in rice and ½ parsley. Cook for about 1 minute.
6. Add in 2 cups of water to the pan and bring to boil. Reduce to simmer and cover for 15 minutes, stirring occasionally.
7. Once rice is tender, stir in peas, ground beef and ½ parsley. Season with salt and pepper if needed. Cook for about 3 minutes until peas are warmed.
8. Remove peppers from oven. Stuff peppers with rice mixture, sprinkle with remaining parsley and enjoy!

I am definitely going to try this. I love stuffed peppers and I just love curry. While it may not be a hit with everyone in my house I'm sure it'll be a hit with me and of course I'll be tweaking it too.
