Next up on our cooking adventure with HelloFresh was these Indian Stuffed Peppers with Curried Beef and Garam Masala Scented Rice. This dish reminded me a lot of making tacos and how I make them all in one pan. I was slightly worried since I’m not a huge curry person but this dish turned out amazing.

Meet Haylie, Nick and there adorable little girls!  Haylie wanted some family pictures and she thankfully trusted me to take them.  We set up at the local berry farm where they did some strawberry picking, kissing and taking in the beautiful scenery on a gorgeous (but hot) day.  Thank you Nick and Haylie, I appreciate you letting me take your family photos and I'm thrilled that you love them!

Recently I've decided to take my love of photography on a more professional tour.  This weekend I had my first real photo shoot with an adorable family of four but while I was waiting for them to show up I couldn't help but snap some pictures of this adorable twosome as they picked strawberries in the fields. Hey guys! So we made our first HelloFresh meal the other day and it was super convenient and yummy. HelloFresh sends you all the ingredients in a nice little package so you don’t even have to go fumbling looking for what items you need, it’s all in one nice little baggy. The first dish we decided to make was their Goat Cheese-Stuffed Chicken Roulades. Sounds super fancy huh? It was surprisingly easy to make in about 40 minutes.

Thirteen years is a very long time to miss your best friend. And I do. Every day. April 29th was the thirteenth anniversary of my best friends passing. Every year for that week or weeks before and after I’m a mess, I just get into a funk and I can’t get out of it. It’s like the loss of a sibling, it devastates my heart.

Sometimes being a mom isn’t easy. Sometimes being a mom with three kids and trying to eat healthy isn’t easy either. I have a lot of tried and true, well tested and husband approved recipes that I love. However, it’s hard to venture out and try new recipes, especially when you have an extremely picky eater on your hands like me. I’ve found that recently going to the grocery store has gotten mundane. I’m buying the same items week after week, making the same meals and just overall bored with my palette and what I cook. That’s when HelloFresh came to the rescue!
